On Bucavac, terroir shapes everything long before the wine reaches the cellar. The steep stone slopes, constant wind, and scarce soil give Babić its natural concentration and character, so our role is mainly to preserve what the vineyard has already expressed.

We value oak, but only as a tool for refinement. Babić is aged in oak barrels for about 12 months. The intention is not to dominate the wine with wood, but to soften the structure and bring a gentle, velvety texture.

What matters most to us is keeping the essence of Babić clearly present — the fruit, the freshness, and the imprint of Bucavac stone.

One of the quiet strengths of Babić from this site is its natural acidity. Even in the Dalmatian warmth, the wine retains a lively backbone, allowing it to age gracefully while remaining fresh and approachable.

The result is a structured yet easy-drinking wine, with smooth tannins, vibrant fruit, and a long, lightly saline finish that speaks clearly of its origin.

Prgin Opolo

Babić in a Brighter Light

We call it Opolo — the traditional Dalmatian name for rosé — because this wine carries a slightly different character than what is often expected from modern pale rosés.

Made from Babić grown on Bucavac, Opolo keeps the variety's vitality while expressing it in a fresher, more vibrant form. The colour is a touch deeper, the fruit more pronounced, and the structure just firm enough to make it comfortable at the table.

To preserve this balance, Opolo grapes are harvested separately and handled gently. After pressing, the juice is quickly separated and vinified to keep the wine clean, dry, and lively.

In its youth, Opolo is juicy and expressive, full of red berry fruit and energy. With a little time in the bottle, it softens slightly and becomes more harmonious, while still keeping its refreshing character.

It is a wine made for Mediterranean moments — relaxed lunches, simple food, and long evenings that stretch into the night.

Dalmatian heritage in white

Debit is one of the oldest indigenous grape varieties in Croatia. Our grapes come from the inland part of Šibenik-Knin County, where cooler nights preserve freshness and aromatic precision.

In contrast to coastal heat, this hinterland position allows the variety to express balance and elegance.
